Once the "El Pilar" national festival is over, we set out on the first of our four annual expeditions in search of the choice potatoes of the secano high inland area that we so enjoy. They're only to be found in the hills of the Montes Universales, thanks to the help of our friend Roberto, who knows the area intimately.

Every year, selecting our anchovies, which always come from Santoña, is an exciting adventure around Cantabria, in the north of Spain. Once they reach our kitchen, their cleaning and preparation is a delicate, painstaking task, undertaken by hand. To these we add our own virgin olive oil from Cordoba, in the south, chosen especially to blend with the anchovies. North and south meet in our ‘Casa’….

Each year, here in Casa Montaña, we eagerly await the beginning of the season for ‘clóchinas’, Valencia’s small, very special mussels, which are only harvested when there’s no ‘r’ in the month. Both tasty and nutritious, they’re simply delicious – a gift from the sea that is such a vital element in the culture of our Cabanyal-Canyamelar neighbourhood.

Our hams come from free-range Iberico pigs that have been reared on tree-shaded pastures and fed an exclusively acorn diet throughout one whole winter. Their unique flavour comes from the carefully monitored curing process in wooden drying rooms which ensure that such hams are an essential feature of our gastronomy.
